MY STORY

Just when you thought it was safe to go into that restaurant! Wait, what'll you have?

Do you know what you can eat? Does the cook/chef know what gluten is? Does he know what gluten intolerance, dermatitis herpetiformis, and wheat allergy are all about?... Do You?

Then of course there is cross-contamination!
Oh my goodness...let's not go here yet! That will be added at a later date.

Do you like donuts? Do you like gravy? Do you like pizza?

Mmmmm I do, or at least I did!

Imagine being told that the food you have been eating for 20+ years is poisining you!
Yes, poisining you! The cookies, hamburgers, spaghetti oh and the ever beloved Kentucky Fried Chicken. Mmmm
How can food like this poison you
I mean it tastes good....Smells good!....Looks good!
Poison...How?

Have you ever heard of gluten?.....or gluten intolerance or or dermatitis herpetiformis or wheat allergy
Do you know what they are?...

Do you have any allergies? ...Are you sure?

Well I never knew what it was until December 2003, by then
I was 39 years old.
For years I had been sick with different things, but nothing really added up to anything so it went undiagnosed as the symptoms were usually different everytime. But the pain never really went away. It seemed to just be consistently there. Sometimes, I'd be sick to my stomach, or sometimes I couldn't get out of the bathroom, or sometimes I wouldn't eat for 15 days, yet I wasn't hungry! Strange huh!
My comfort food when I was able to eat was usually cheese
sandwiches, fresh soft bread...mmm!

But yet this was my poison....and oh how I love Tim Horton's
toasted BLT.
Again, poison!

Do you know what gluten is yet? Do you know what gluten intolerance, dermatitis herpetiformis, wheat allergy are yet? Do you care?
Well if you've lived your live as I have then, yes...you need to care... and you need to know!

Gluten is in almost everything you eat..things for breakfast, things for lunch, things for dinner and the most important latenight snack.

Let me tell you alittle bit about what I'm talking about...and don't worry, there's no fees and nothing to buy. This is just information from me to you.
If I can help someone else get diagnosed earlier than I did, then I feel this is worth putting it out there.

In December of 2003 I was diagnosed with Celiac disease.
I had gone to my family doctor in late November as it was getting harder and harder to get around. I hadn't felt quite right for sometime but it had been that way most of my life so I was used to feeling crappy all the time. But this was different, I really felt like something was happening that I hadn't felt before
as this was the first time I had trouble being mobile. I would wake up in the morning and feel like I hadn't slept at all! I was so tired I just wanted to roll over and go back to sleep. No energy to get up, no desire either...sadly, I was only 39 at the time and I felt like I was 100. I thought it's only downhill from here, but is it supposed to be like this? I had been sick for over 20 years and I thought it is supposed to be like this.

Boy was I wrong, no one should feel like that everyday unless there is a problem!
Sure life can get you down, debts, kids etc...but your health should come first as it is the only one you've got.
If you dread the morning's, or getting ready to go out becomes a struggle, where you'd rather just stay home than join a club, or go shopping or be with your family or socialize even, going to work was difficult, to the point you get fired for too many days off!
When you go to the Doctor to get a note for work to save your job, well, he can't find anything wrong with you, he can see your in pain...he can see your not well but...there is nothing wrong! so he won't give you a note. Hence comes the firing!

Let me tell you I have lost at least 3 really good jobs in my life because of this.
But not knowing about it then, makes it understandable now. Although for years I thought I was losing my mind. Thinking it was all in my head, as the doctors couldn't find anything wrong. Test after test after doctor after doctor!
Where was it going to stop!

I moved from a big city at one end of the country, to a very small city at the other end of the country. I would say, after 2 visits to the doctor here, he sent me to a specialist for Gastrointestinal ailments. He listened to ME, asked questions
about ME , wanted to know how life was for ME. What can he do to make it better? FOR ME!
Let me tell you, the fact that he listened to me made all the difference. I went over everything that has happened in the last 20 years, he took notes, looked up stuff and made me feel like I mattered.

Well he scheduled me for a test where they put a camera down your throat. (your usually asleep for this) then while their there, they do a biopsy.
The result of the biopsy --- Celiac-Sprue allergy!
Duh....what's that?
It's a Gluten allergy, an allergy to gluten!
Again you ask ... ok ... what is it?...like peanuts?
No it's not like peanuts, although it could be deadly!

Gluten intolerance, dermatitis herpetiformis, wheat allergy words I knew nothing about!

When I found out what I had, I went to my fridge and cupboards to see what was in there that I could eat.

In The Freeze there wasr:
Frozen Veggies
oh and some icecubes.
hmmmm

In The Fridge:
Well there is some oranges,
some carrotts, onions &
eggs.

In The Cupboards:
Well, that's a different story.
I had 1 can of Maple Beans
and a box of Rice.

So, after just spending $125.00 on groceries, there is
what there's maybe 7 things of that stuff I can eat.
Needless to say that is all I ate for the first little while as
I had no idea what I was supposed to look for.
I still don't know really, I just stick to what I do know.

The worst of it is, I don't really know how to cook!
But I knew I couldn't eat any frozen dinners, or already
prepared foods, or bread products.....
SO, what I did was simple, I went to M & M 's, I asked if they
had a list of their ingredients in the foods they had. The girl there was so nice, she put together a list of all products that are Gluten free.

You can get them to add new products as they get them.
This girl literally saved me from starving to death! Since then, I have learned alittle more, but really, not what I need to. So I thought I would put this up there for newbies like me to get a
quick start.
The meals that I have listed are very simple to put together, mainly because I have a fixed budget and I don't know how to cook.

You can alternate spices and sauces, please stick to the brand names that you know are gluten-free. The ones I have listed
as far as I know they are all safe for us Celiacans.

If anyone knows different, please let me know so I can correct it.

So, I'll update as I learn more, I have added some links to the other sites that helped me in the beginning, but I needed something simple and therefore, this is why I have done this. For someone with limited income, or no time, or
just not able to cook the fancy meals, this should be a quick fix.
