EASY MEALS

FISH DINNER

Main Foods needed for this meal:

This is what I use, you can get fish anywhere, I just like this combination.
and I trust the source.

Frozen Cod fillets from M&M's
Frozen California vegetables mix from M&M's
Celimix Bread mix from Whole Foods Market
Potatoes from anywhere.

You can use dried spices (be sure they are gluten-free) like seasoned salt,
or fish spice to mix in with the celimix, some salt and pepper for flavour.

Thaw Fish a few hours,
Put some lemon juice on a plate, place fish on top, wetting both sides.
put some celimix (spiced/flavoured) on a flat plate (enough to coat)
place fish on the mix, covering both sides. (you don't need tons)

Get a frying pan that's about 2-21/2 in deep.
Put enough sunflower cooking oil in it to come about half way up the side
of the fish,
no more than that.
Heat up the oil, when it's ready place fish carefully in the pan.
About 8 mins on a med-high heat on each side. Timing is everything.
No need to flip any more than that.

1 cup of veggies
put them in a microwavable dish
with some water.
3:30 secs in microwave

Baked potatoe with sour cream....

Simple fast and good to eat!

CHICKEN DINNER

Main Foods needed for this meal:

Again - This is what I use, you can get chicken anywhere, I just like this combination.
and I trust the source.

Bonless and Skinless Chicken from M&M's

Thaw chicken for a few hours.
Get a baking dish/bowl big enough to fit how ever many pieces of chicken.
Put some Gluten free Teriyaki sauce in the bowl -Sauce can be slightly diluted with water-
and put the chicken in it. Cover the top of the chicken with more sauce.
Cover dish, place in oven at 350 degrees for approximately an hour to an hour and a half
(depending on how thick, or how unthawed the chicken is) Longer is good as it makes it very tender.
Do Not Overcook, chicken will be dryier.

Then
1 cup of veggies (California Mix)
put them in a microwavable dish
with some water.
3:30 secs in microwave

Make some rice, - this will become your best friend!

Now what I do next is a preference, again, these are my quick meals.

I mix the rice and the veggies together, and mix it with some of the teriyaki sauce.

PORK CHOP MEAL

Main Foods needed for this meal:

Again - This is what I use, you can get pork chops anywhere, I just like this combination.
and I trust the source.

Thaw pork chops for a few hours.

Mix some dried spices together with some Gluten-free BBQ sauce.
Brush both sides of the chop, covering it well.
Place on cookie sheet in 325 degree oven
Turn after 25 mins.
Cook for another 25 mins. (depending on how thick, or how unthawed the chops are)

Boil and mash or whip the potatoes.
Boil some peas.

Done.

This one always tastes great!

You can use alternatives for flavouring based on your preferences. Again, these are what
I had to learn quickly, and I really enjoy them now.

 

Ok, breakfasts

Did I mention I can't cook?...I mean I hate to cook! Especially in the morning.

So, the best thing I have found is eggs.
I scramble them with ham, or tomatoes, or onions or al of it!
Add some cheese...mmmm
Because I like it, I make it a few times a week. Again, because I know it's safe,
and it's not a big deal to make.

There is also yougurt and fresh fruit.
A great summer breakfast, lunch also.
I use Dannon yogurt. I seem to tolerate it ok. I found this information from Dannon
so I included the link. www.dannon.com/pdf/yogurtIngredients.pdf As for the fruit, I buy a $4.99 bowl of cut mixed fruit, I take it home, I cut it into smaller chunks, split it up, maybe 3 or 4 servings. Then when I want one, it's all ready, I dip it in the yogurt.

Done Quite yummy, and again quite healthy.

Lunches...hmmm
I'm not a fan of eating all the time, and I hate big meals...so.. I opted for lunch, if I really have to eat then it would be Gluten-free maple sausages. They are great with a drop of maple syrup. and there is always eggs, or fruit and yogurt for lunch. Mix it up!

This is just what I have found I can tolerate. I am experimenting once in awhile for new ones. I will add more as I come across them. If you find I have wrong information, please let me know. As I said in the beginning, I don't know all I should, I just know what I can tolerate and deal with and what fits in my lifestyle. This may not be for everyone. But the fact that I am doing this means a simple solution wasn't available to me. Or at least I never found. Someone else may need a simple solution. I hope it helps.
